Meal Plan for the Week of 12/13/21

Our freezer is full. Like FULL FULL. Like we cooked two turkeys for Thanksgiving and ended up with three gallons of turkey stock and have nowhere to put them full. So Trevor decided this week we’re cleaning of the freezer/fridge/pantry for dinner. His idea was specifically, “just defrost some meat and roast it with veggies.” But that seemed a little too 1) logical, 2) easy, 3) boring. So I got a little creative…but just a little so nothing super wild this week.

Monday

Lunch

No recipe just a product plug for the Dill Pickle Salad Kit at Costco. Sounds like it might be terrible but it is dill-icious (I’m sorry I’m like this). I do stretch these kits out a bit with extra greens and some diced chicken.

Dinner

Monday Brought to You by Costco! Amylu Chicken Meatballs - cranberry & jalapeno variety - tossed with any barbecue sauce you have on hand, served with roasted butternut squash.

Based on a recommendation from a friend I made this delicious Chipotle Pumpkin Soup with Crispy Chorizo+. Caramelized Apples. We substituted hot sausage from my uncle’s farm for the chorizo because it was in the freezer and it still worked really well. I also omitted the cheese from the soup but Trevor stirred some into his bowl, both versions were tasty!

Wednesday

Dinner

We had a major storm roll through and even though my cooking energy was v low, I knew ordering takeout in 60 mph winds was not the right thing to do. Skinnytaste to the rescue! We made her One Pot Cheesy Turkey Taco Chili Mac. One of the things I love about SkinnyTaste is that in one place I can find a recipe that is only pantry staples, like this one, or one that stretches me a little. The one pot-ness of this recipe is what pulled me in and that the ingredient list was pretty accessible, but I did realize I was missing a few things.

Bless frozen rice, chicken, and Costco veggies. I had a GIANT stir-fry and highly recommend a mushroom medley purchase.

Friday, Saturday, Sunday

We were tired. We had leftovers, freezer meals, and takeout. Highly recommend a mental health break when you need it.
